The River Valley Healthy Communities Coalition has adopted two downtown planters for their Adopt-A-Spot plantings. Instead of planting all flowers, a variety of vegetables and edible flowers are growing. Anyone who wishes may pick and eat these nutritional foods. A few tiny eggplants are growing, along with tomatoes, summer squash and edible pansies. Haricot vert, the tiny, immature snap beans shown above, are fabulous lightly sauteed in olive oil and garlic.
This Adopt-A-Spot planter in downtown Rumford is sponsored by the River Valley Healthy Communities Coalition. Among the edibles are pansies (great to top off a green salad), beans, summer squash, eggplants, herbs and much more. Anyone is welcome to help themselves to the produce.
