WEST PARIS — Husband-and-wife team Yvette and Gulmaro Romero, owners of Romero’s Mexican Food Truck at Cooper Farms, 27 Bethel Road in West Paris, are exploring the possibility of opening a second location at 10 Mechanic Street in Bethel.

The proposed site was formerly a NAPA store and is currently owned by Wade Kavanaugh, who received Select Board approval for a food truck at a May meeting.

The Romeros say plans are still in development, and they haven’t decided whether they will operate both locations simultaneously.

“Eventually, we would like a little brick and mortar,” said Yvette. “But everything is so expensive.”

The West Paris truck, which the couple launched in 2022, remains busy, drawing a steady stream of customers even on weekdays. The Romeros prepare their own salsa, refried beans, and many other ingredients from scratch.

Customer Roger Corbett of South Paris expressed concern about a potential move to Bethel. “I’d hate for that – it’s a long way,” he said. “I would miss them a lot.” Corbett, who grew up in Texas, said his standards are high and that he often brings visiting family to the food truck during his regular weekly visits.

Feeding the community has long been Gulmaro’s dream, according to Yvette. “I’m happy to take the ride with him,” she said.

Their menu includes quesadillas, fajitas, and burritos, all priced around $15. A standout specialty is the quesabirria with consommé – three handmade grilled tortillas filled with shredded beef, cheese, and onion, served with a rich dipping broth. Sides include French fries, chips and queso, rice, and refried beans.

Yvette, a registered nurse, works contract nursing jobs during the summer and is a full-time nurse in the winter. “Meeting new people – at the truck and as a nurse – is the best part,” she said. Gulmaro added, “I like to see people happy after they’ve eaten.”

Romero’s Mexican Food Truck in West Paris is open Wednesday through Sunday from 11 a.m. to 7 p.m.
